抹茶華夫餅 (酵母版)

Matcha Waffles (Yeast Version)

食材 Ingredients

高筋麵粉 200克

牛奶 90克

細砂糖 20克

黃油 15克

抹茶粉 4克

酵母 2克

雞蛋 1個

鹽 1克

High-gluten flour 200g

Milk 90g

Caster sugar 20g

Butter 15g

Matcha powder 4g

Yeast 2g

Egg 1

Salt 1g

製作步驟 Steps


1??   除黃油和鹽外所有食材揉成麵團,再加入軟化黃油和鹽,揉至表面光滑。

Kneading

Mix all ingredients except butter and salt into a dough. Add softened butter and salt, then knead until smooth.


2??   蓋保鮮膜室溫發酵至兩倍大,或放冰箱冷藏發酵一晚。

Fermentation

Cover with plastic wrap and ferment at room temperature until doubled in size, or cold ferment in the fridge overnight.


3??   取出麵團揉搓排氣,均勻分成小劑子。

Shaping

Take out the dough, knead to release air, and divide equally into small dough balls.


4??   華夫餅機預熱,放入麵團全程小火壓烤約 2 分鐘,表面微黃即可。

Baking

Preheat the waffle maker, place the dough inside, and press over low heat for about 2 minutes until slightly golden.

無機器替代

可用平底不粘鍋小火慢煎,或烤箱 160 度烤 15 分鐘。

Alternative

Use a non-stick skillet over low heat, or bake in an oven at 180°C for 15 minutes.

保存與複熱

放涼後密封冷凍。吃前用微波爐、空氣炸鍋或烤箱加熱恢復口感。

Storage

Seal and freeze after cooling. Reheat with a microwave, air fryer, or oven before serving.
